Ginger, tumeric & chicken broth bowl

This is light but nourishing, easy to digest, and supportive for the gut lining.

Serves 2



Ingredients


300g chicken thighs or breasts, cooked and shredded

750ml bone broth or good quality chicken stock

1 tbsp fresh ginger, grated

1 tsp fresh turmeric or a good pinch of ground turmeric

2 cloves garlic, finely chopped

1 medium carrot sliced

1 medium courgette, sliced

2 large handfuls of spinach or kale

1tbsp olive oil

pepper and sea salt to taste


Method


Gently sauté garlic, ginger and turmeric in olive oil.

Add carrots and courgette, then pour over broth.

Simmer until vegetables are soft.

Stir in shredded cooked chicken and leafy greens and warm through.
